WHAT GOES IN
Fish-cleaned – 1/2 kg
White wine – 50 ml
Potato – 250 gms
Onion chopped – 50 gms
Green chilly chopped – 10 gms
Butter – 50 gms
Salt – 5 gms
Pepper powder – 3 gms
Cumin powder – 1/2 tspn
Lime juice – 10 ml
Coriander leaves chopped – 10 gms
Refined flour – 30 gms
Oil for frying – 100 ml
HOW TO PREPARE
1. Poach fish in wine liquor until cooked then seperate the meat.
2. Boil potatoes and mash roughly.
3. Heat butter and saute onion and chilly for 3 mts and add into fish. Mix with remaining spices, seasonings, lime juice and coriander leaves.
4. Roll into 8 uniform cylinders, dust with flour and fry in hot oil until golden brown and remove.
Accompaniment : Cabbage salad, tomato sauce and cucumber.
