What goes in:
Lobster(deheaded) – 4 nos.
White vinegar – 15 ml
Salt – 1 tspn
Black pepper powder – 1/2 tspn
Green grapes – 50 gms
Black grapes – 50 gms
Pomegranate pearls – 100 gms
Parsley chopped – 15 gms
Potato round scoops – 50 gms
Carrot round scoops – 50 gms
Brussel sprouts – 50 gms
Oil – 30 ml
Red cabbage(shredded) – 50 gms
Lettuce leaves – 1 bunch
How to prepare:
1. Blanch lobster body in vinegar and salt water.
2. Split into two separate meat and dice them.
3. Meanwhile blanch and glaze potato, brussel sprouts and carrot.
4. In a bowl toss together lobster meat, half of pomegranate, grapes, parsley, salt, pepper, lime juice and oil.
5. In an oblong plate serve at room temperature as shown in the picture.
Accompaniment : Dry nuts and fruits pulao.
